So as many of you know Adam had a kidney stone recently, now that it is all settled and over with we now have to do things to prevent new ones from happening because heaven knows how awful they are. I don't want to see my love go through that again. Lets back up a tiny bit, a few months ago we got the test results back from the lab and learned that Adam's cholesterol is high and his triglycerides are high as well. So because of that he was put on a low fat, low carb, low sugar diet. If you know me you know I don't cook, I hardly did before except for skillets and easy oven things. So to actually have to follow a recipe and plan a menu your looking at the wrong girl to do the job. Growing up I hardly cooked a meal I helped but rarely did I make one from scratch. So this new wifely duty was taking me really out of my {COMFORT ZONE}. I have been planning a menu and cooking for my love for the past 3 weeks and then we had a follow up with the Urologist to see what caused the kidney stone in the first place. Well now we have to have the diet low in Oxalates as well. So now I have to find things that are not only low in fat, low in carbs, low in sugar, and now low in oxalates !! A lot of the things that are high in oxalates we have been eating. I had no idea this would be so hard. I was just getting used to the diet from before and now this so I have to come up with a new game plan. We are not going to adhere strictly to all of the restrictions but we will do the best we can. It really has been a great and frustrating learning curve but I'm willing to do whatever it takes to keep my honey healthy and I know its good for me as well. The food actually tastes better then store bought frozen meals but its takes a ton more effort. Adam has been so willing to pitch in and help with the cooking so it has brought us closer in that sense as well. I know that what we are doing is improving not only his lifespan but mine as well. It has really been a struggle but it will be worth all the work and stress. I am grateful that life puts things in my path that test me and make life more interesting and fun. Although it would be easier to just stick something in the microwave I am determined to come out of that {COMFORT ZONE} and into a new one!
